When I access the CUPS page for this printer, I get very few options under "set default options" - just banner page options and error policies. 

I will try setting duplex with the .lpoptions file (as the tomcat6 user on server) as described here: http://www.lbl.gov/IT/CIS/dp/cups-lpoptions.html

Have you tried changing the default printer settings through the cups web interface rather than through ubuntu printing? I have found that some of the settings on some printers are easier to set through the web interface and are more extensive as well. So on the computer (sounds like your server) the printer is attached to go to http://localhost:631 in a web browser and change your printer's default settings there.



OpenVPMS then uses the default settings.
